About Us

Originally from France, we moved to the US over a decade ago with a crazy dream: to start a food truck in Florida !That’s how Planet Grilled Cheese was born in 2016 in Tampa! A few months later, we opened our first brick-and-mortar locations.

Thanks to this big and crazy dream of ours, we were able to first secure a business visa as entrepreneurs and later a green card based on our accomplishments, the success of the business, and the jobs we created. Planet Grilled Cheese truly changed our lives in such a positive way and we’re truly thankful to all our customers because without you, we wouldn’t have been able to achieve our dream and raise our family in this country we proudly call home!

After the rollercoaster of Covid, and tired of big city traffic and chaos, we decided it was time for a change. We fell in love with the Space Coast, its lifestyle, and its amazing people, so we packed up and moved here. Best decision ever!

In 2022, we opened our first Brevard location at Melbourne Square Mall, followed by a second one in 2025 in Indian Harbour Beach.

Many people mistake us for a franchise, but we’re not. From the brand design and food photography to remodeling and decorating our stores, we’ve built everything ourselves. We’re proud to own the Planet Grilled Cheese brand and look forward to opening more locations in Brevard while continuing to delight you with our crafted sandwiches and beverages!

We’re a husband-and-wife team, proud and happy parents of a beautiful baby girl (born on National Grilled Cheese Day !!!) and an adorable husky we absolutely adore.

Meet Us!

Laury Labussiere Torres.

I’m a proud mom, a lucky and happy wife, and someone deeply passionate about business and the restaurant industry. Born in Paris but American at heart, I hold two bachelor’s degrees in Marketing and Sales as well as a master’s in Business Management and Strategy, though most of what I know comes from working side by side with my team, hands-on. I’m often called “the best boss ever” (though I admit that I am a control freak and can be a pain sometimes!). In my free time, I love going to the park or beach with our little family, or baking and cooking something special for them.

Arsene Torres.

After a career as a professional motocross rider (and to many injuries 🥴), I became a coach and ran a dirtbike school in France for many years. I’ve always loved the US and dreamed of building a business and raising a family here, a dream I’m lucky to now live.

I’m a digital and marketing specialist with a deep interest in finance, AI and entrepreneurship in general. When I’m not working, you’ll probably find me surfing, reading, or just enjoying time with my family.
